Professional chef’s knife combines the shape of a traditional Western chef’s knife with the lightweight design of a Japanese knife for added durability, exquisite cutting ability, and ease of rocking, cutting, slicing and dicing. And polished and forged by a renowned Japanese knifemaker; forged blade with 3 layers of 90CR18MOV composite steel with a hardness of 58±2 HRC; significantly improved sharpness, thinness, edge retention, higher strength.
