MITSUMOTO SAKARI 8.5 inch Japanese Hand-Forged VG-10 Damascus Santoku Knife
Hand-forged chef’s knife combines the shape of a Japanese samurai sword with the lightweight design of a Western-style chef’s knife for added durability, refined cutting ability, and ease of rocking, cutting, slicing and dicing. Polished and forged by a renowned Japanese knifemaker; produces a 2.0mm VG-10 Damascus steel blade; 60±2 HRC hardness; significantly improved sharpness, thinness, edge retention, higher strength and durability.
