Our blades are made of the highest quality stainless steel, using a vacuum cold/heat treatment process that results in a sharper, longer-lasting blade than other kitchen knives.

Precision Cuts
Our 14 to 16 degree V-shaped blades are made from high-carbon 5Cr15MoV stainless steel.
With 0.3% carbon composition and a Rockwell Hardness rating of 56 ± 2, the Hokkan Series knives are two times harder than other knives in their class. -

Made with stainless steel, cleaning our blades is as easy as wiping them gently with a wet sponge or cloth.
